Mix vegetable Curry


Ingredients:
1 large chopped onion
1 big size tomato cut in cub
2 medium size potato peel and cut in to cube
3 small size brinjal (baingan/ Ringna) cut into cub
1 cup chopped green fresh papdi (broad beans/valor)
1 small peel and cut carrot (gajar)
4 tbsp oil
1 tbsp mustard seeds
1 tbsp cumin seeds
1 tbsp garlic paste with red chilli powder
½ tbsp turmeric powder
A pinch of asafetida (hing)
Salt to taste
Water- as required

Method:
Step 1: Heat the oil into cooker and add mustards seeds.
Step 2: When the seeds crackle, add the cumin seeds, asafetida and garlic red chilli powder paste.
Step 3: Add the onion pieces and sauté on a medium flame for few seconds.

Step 4: Then add pieces of potatoes, carrot, and tomato and mix well.

Step 5: Last add the brinjal pieces and chopped broad beans (papdi).

Step 6: Turn the flame law and add the turmeric powder and salt to taste and mix well.

Step 7: Cook for while and then add ¼ cup (approximate) of water.

Step 8: Pressure cook for three whistles. Two whistles on full flame and one in law flame so curry cooks well.
Step 9: Wait for 4-5 minutes and then open the cooker.


Step 10: Place into serving bowl
Step 11: Serve hot with curd, aachaar and roti.:)

You keep telling yourself, "that special someone is just a friend", but you realize that you can not avoid that person's special attraction. At that moment,you are in love.No mater how softly you whisper a prayer, God surely listens, understands and knows the hopes and fears you keep in your heart. For when you trust in His love, miracles happen!

Bottle Gourd-Bengal gram( Lauki-Chana Dal)

In Gujarat we call Dudhi chana nu Shaak.

Ingredients:

1-cup soaks Bengal gram (Soak 1 hour)
2-cup chopped Bottle gourd (Lauki/White gourd)

Ingredients for temper:

2-tbsp oil
1\2-tbsp garlic+ red chilli paste
1\2-tbsp mustard seeds
1\2-tbsp cumin seeds

Ingredients for masala:
1\2-tbsp turmeric powder
1\2-tbsp red chilli powder
Salt to taste.


Method:
Step 1: Drain the excess water from chana dal(Bengal Gram) and keep it aside.

Step 2: Heat the oil in cooker.
Step 3: Add the mustard seed and cumin seed in it. When they are pop up then add garlic red chilli paste in it.

Step 4: Add soak chana dal in it.

Step 5: Add chopped bottle gourd(Lauki), turmeric powder, red chilli powder and salt to taste.

Step 6: Mix well and add little water (half cup) in it and closed the cooker lid.

Step 7: Cook up to three vishal of cooker.

Step 8: Let it cool for 5 minutes and after that garnish with coriander leaves.

Step 9: Serve hot with Bajri Rotala and green chilli pickle.

Chori nu Saak / Chauli nu Shaak

Ingredients:
150 gm chori or 1-2 bunches of fresh Long Beans (chauli,chawli), or known as Dow Gok In Asian Stores-chopped
1\2-tbsp mustard seeds
1\2-tbsp cumin seeds
1-tbsp garlic paste
1\2-tbsp turmeric powder
2-tbsp oil
Salt to taste
4-round cut tomato slices for decoration

Method:
Step 1: Cut the chori in to small pieces.


Step 2: Heat the oil in thick bottom pan and add mustard seeds and cumin seeds when the pop up then add garlic paste in it.

Step 3: Add the finely chopped chori in it and close with lid for 2 minutes.
Step 4: Add red chilli powder, turmeric powder and salt to taste. Cook in low flame for 7 minutes, stirring in between.


Step 4: Turn off the flame and place it in serving bowl and decorate with tomato slices.


Serve with Roti and Curd..........:)

Vagharelo Rotalo

Orignal Village dish
Ingredients:

One big size Rotalo
One big size finely chopped onion
1-tbsp garlic paste
1\2-tbsp turmeric powder
3-cup butter milk
2-tbsp oil
Salt to taste



Method:
Step 1: Make very small pieces of rotala almost look like flour. This can be done in two ways. Either tears the rotalo into small pieces and grinds them in to the grinder or food processor or you keep rubbing the pieces of rotala between your palms to crush it into very small pieces. I make this by my palms.

Step 2: Heat the oil in a pan in law flame and add garlic paste in it.

Step 3: Add finely chopped onion and turmeric powder in it and cook until they are golden brown.
Step 4: After that add 3-cup butter milk and salt to taste.

Step 5: Cook in high flame until the butter milk is bubbling.

Step 6: After that turn the flame low and add prepared material of Rotala in it.

Step 7: Stirring continuously and cook until they become like thick gravy.

Step 8: Turn off the flame and garnish with coriander leaves.
Note: Always serve hot. You also make same dish with use Roti.

Tandoori Aloo/Potato snack

Baby potatoes tossed in a spicy mixture...you can even serve this dish with your main course.

Ingredients:

1-cup baby potatoes,

1-tbsp oil,

Coriander leaves and cheese (optional) for garnish.


Ingredients for paste:

2-tbsp coriander-cumin seed powder,

1-tbsp red chilli powder,

8-9 cloves garlic,

1-small piece ginger,

Salt to taste.


* Crush all material of paste in mixer until smooth paste.


Method:
Step 1: Wash the baby potatoes thoroughly, pierce them with a fork.

Step 2: Place the potatoes all around the circumference of the microwave dish. Place a glass of the water in the center of the dish to prevent the potatoes from getting wrinkled.

Step 3: Microwave on High for 5 to 6 minutes until the potatoes are soft.

Step 4: Heat the oil in a microwave bowl.

Step 5: Add the prepared paste and mix well. Microwave on high for 1 minute.

Step 6: Add cut potatoes and mix well.

Step 7: Microwave on high for 2-minutes.

Step 8: Garnish with coriander leaves and if you like the taste of cheese than add grated cheese also. Serve hot baby potatoes with your cocktail.
