Mango-Spicy Aachar (Khatu Athanu)

Ingredients:
1-Kg mango pieces,
200 gm ready made Ramday Achar masala,
300ml mustard (sarson) oil,
2-tbsp turmeric powder,
2-tbsp salt.

Method:
Step 1: Cut the Green mango in to medium pieces.

Step 2: Wash the mango pieces and dry with a towel.
Step 3: Sprinkle salt and turmeric powder and keep in a glass jar for one day.
Step 4: After one day mango pieces color is slightly yellow and soft.
Step 5: Remove extra water and dry this pieces over the muslin cloth for 2-hours.

Step 6: Take dry vessel, now add ready made ramdav aachar masala with dry mango pieces.

Step 7: Mix well with spoon.

Step 8: Take clean and dry glass jar and fill the glass jar with prepared aachar.

Step 9: Heat the mustard seeds oil till smoking hot. Allow to cool to room temperature.
Step 10: Now pour this oil in the prepared aachar jar.

Step 11: Leave it for 2-3 days till the mango pieces are totally soft.
Step 12: Care should be taken to take out the aachar for use only a little at a time.

Note : Also using a clean dry spoon to take out the aachar is of almost importance.

Did you get the vendor cut the mango with the shells or did you do it yrself.. When in India, we always ask the vendor to do tht for us.. Bring them home and rest is history ... slurp!

Mara sasueh last week maney 10 jaat na athana parcel karya, ghare banavine aney vaccum pack karine! Badha etla saras chene!! Maney khaatu aney Gol-Kerinu athanu bahuj bhave.

Tayyar masala thi ketlu easy thai gayu che...tari recipe bau mast che!

When we purchase mango for aachar then vendor cut this mango in to this type of pieces not at home my dear. At home we not cut.....like this.....you know when I buy the mango for aachar then I miss to take photo.....so when I next time go to market then another lady is cut her mango for aachar so I take this photo at market place. Thanks for lovely comment.:)

You are absolutely right gujrati ma athana banej.......pan hay to ahi ya pan badha ready made lave chhe........mara ghare to hu j khavu chhu atle thoda thoda banavi ya chhe te pan khaatu aney gol-kerinu ......Tara sasu na athana saras ma tane maja padti hase.:)

U R pickle recipe looks great and very mouth watering on reading. I would like to make it at home.
But I dont know weather I will get Ramdev Mix at Chennai. It is not available in the malls near to my residence.
Requeat if U could give the masala preperation too...

Amazing work you Ms.Kajal! I am from down Kerala but am brought up in Baroda Gujarat, so am an amalgam :) And i am crazy about gujju food
The redchilli chutney is enlightening because before today never knew about it. thanks for all these authentic guju recipes and keep it going I had a request do you have any idea about boar( berries) nu athanu i remember my neighbor making it by sun drying the boar and thats all i remember. It would be great if you could post it.
