Samosa-Chaat

Ingredients for the crust:
1-cup maida,
3-tsp oil,
salt to taste.

Method to prepare the crust:
Step 1: Mix the maida ,oil , salt to taste. Add enough water and knead the dough .


Step 2: Covering it with vessel will keep it soft.



Step 3: Keep it aside for 10 to 15 minutes.

Ingredients for stuffing:
1\2-cup mashed boiled potatoes,
1-cup boiled green peas,
1\2-cup chopped onion,
1-tsp. garam masala,
1-tsp. red chilli powder,
1-tsp amchoor(mango powder),
Salt to taste.


Method to prepare the stuffing:
Step 1: Mash boiled green peas.



Step 2: Heat 2-tsp oil in pan and fry onion until golden brown.



Step 3: Reduce the heat and add mashed green peas. Fry only 2-3 minutes.

Step 4: Then add mashed potatoes and mix well. After 2-3 minutes turn off flame.

Method to prepare the Samosa:
Step 1:Make little balls of dough , roll it out in any shape and then place it in the triangular shaped container. I use this to make it quikly. This happens with only one layer of dough on samosa, also it will bring crispiness while frying.


Step 2: Fill the stuffing into them and pack them from the wide end of the triangle.

Step 3: Heat oil in a frying pan and deep fry until golden brown.


Step 4: Serve hot with ketchup or coriander leaves chutney.


Step 5: Cut to 6-7 pieces and garnish this with chopped onions, yogurt ,green chutney, Red garlic chutney ,Date-tamarind chutney,Sev and fresh coriander leaves.

My husband Amaan is a big fan of Samosas...and I usually do away with store bought / ready made ones...this looks yummy...Iam really licking my lips...!! With those clear notes and photos, hope anyone can start a samosa biz..he he..I jus love it.

As they say a picture is worth thousand words.. you really do justice to that phrase.. beautiful pics and autographed too :) very clean cut recipe and makes it easier to follow with detailed picture. But where did you get that traingular samosa maker?? because thats the most difficult part in making a samosa to get that perfect triangular shape. And since this is my first time on your blog (came from my dhaba) wanted to know which part of the world do you write this blog from..Loved it and will keep visiting .

Away from home 15months,, I've had enough.. tonight I made chat.. chana masala, samosas, tamarind chutney.. sprinkled sev, added chopped onion, tomatoes, green chillies, and had the yummiest food in more than a year.
Thanks for your recipe,, I had tried other recipes for masala before, but yours tasted most authentic.. To save some hassle I use spring roll wraps (for the crust), it tastes pretty good.

Please please could you tell us where you bought the triangle shaped container/samosa maker? Is it available anywhere online? A search for samosa maker did not find the container you show in your picture. Which city/store did you buy that from? Also is there a "technical name" that it commonly goes by?

I was by this from Ahmedabad Gujarat in India.

It is easily available here but I think online I have no idea by sister is also in us but she was bought this triangle shape from here. It is call as Smaosa maker here.
