Fry Mix Vegetable Curry

1-cup chopped potatoes,
1-cup chopped carrot,
1-cup green peas,
1-tbsp chilli powder,
1-tbsp turmeric powder,
1-tbsp cumin seeds,
1-tbsp mustard seeds,
1-tbsp asophotedia,
10-curry leaves,
Salt to taste.

Step 1: Heat oil and fry chopped potatoes and keep aside.
Step 2: Than fry chopped carrot and keep aside.

Step 3: Heat 2-tbsp oil in the pan and add cumin seeds, mustard seeds, asophotedia and curry leaves.
Step 4: Then add green peas in it and cook for 3-4 minutes.
Step 5: Fry potatoes and carrot in it.
Step 6: Then add chilli powder, turmeric powder and salt. Mix well.

Step 7: Garnish with coriander leaves.

Step 8: Serve hot with roti and onion.
